This is spanakopita. (These are spanakopitas?)
It’s spinach and feta wrapped up into little phyllo triangles and doused with butter. The phyllo gets golden brown and butter-crispy and shatters into little shards that get all over your clothes that will make people on the street look at you funny if you forget to lint-roll yourself before leaving home.

I apologize in advance for any bacon cravings that might ensue due to you reading this post.
This is one of those things that you don’t want to have lingering in the house. You want to make it for something (a party, another recipe, etc.) and then get it the hell out of your sight. Because no one’s willpower is strong enough to stand against candied bacon.

Sometimes, things just make sense. Like when two fantastic food concepts smash together in just the right way.
Fried green tomatoes are crispy and golden and fantastic by themselves… but stack them with fresh mozzarella and basil and a good heavy drizzle of balsamic reduction, and it’s the most unique and hearty caprese salad I’ve ever seen. And just look how pretty.
Can’t you imagine serving this as an appetizer at a dinner party, arranged willy-nilly on a big platter with basil leaves and balsamic scattered all over? But it’s simple enough to make for lunch today. Because the tomatoes are baked for a while, it doesn’t matter as much that tomatoes are sneaking out of season as we speak. Just get on it and make these ASAP before they’re all gone until next year!

Let me make this clear: for many situations, there is no alternative to bacon.
Bacon comes from the bellies of happy, fat pigs. It is salty and smoky and nothing, not turkey bacon, not smoked tofu shaped and pressed to look like bacon, and especially not mushrooms, can ever take its place.
But you know what? Sometimes I get a little curious. I mean, come on. If I told you that if you take mushrooms and soak them in a little bit of soy sauce and bake them, they taste vaguely like bacon, would you believe me?
