I have an extremely un-classy thing to compare these muffins to. Okay. Here goes.
Did you ever go to El Torito Grill? It’s this Mexican restaurant chain, mostly found on the west coast. I remember going on a lot of dates there in high school because, you know, it was high school. We had low standards and were low on pocket change.
Anyway. There was this corn cake thing that accompanied a lot of the dishes. Not cornbread, but this wet, doughy corn mash, partly whole corn kernels and partly cornbread. It was kind of sweet and I was addicted to the stuff. I would always order extra.

You guys. I am so excited to share this recipe with you. I made it for the first time last week and immediately proceeded to eat the entire batch, standing up at the counter in my kitchen. Then I had to make a another batch so I could photograph it.
It couldn’t be simpler: nutty chickpeas, tossed in a little butter, sugar, salt, and spice, roasted until caramelized and crunchy. Sticky with honey, they’re so addictive I had to put the jar of them on a high shelf out of my sight so I wouldn’t eat an entire second batch in one day.

Another foray into the world of savory shortbread and yet another chapter in the leftover cheese chronicles, these crumbly little numbers sprang from a party for which, as is my wont, I bought way more cheese than was strictly necessary.
Cheese, especially good cheese, is expensive. If you want dairy made from happy grass-eating cows and sheep and goats, you’re going to need to spend a little more than you would on dairy from animals fed on industrial corn. But I swear you can taste the sunshine and green fields and happiness in that cheese, and to me, that’s worth it.

Friends: if you are on le régime, I warn you to stop reading this right now. Because this? This is what nearly destroyed my fledgling considerations of going on a — oh, you know, lifestyle change.
Justification: popcorn is a whole grain. Rebuttal: oh who are you kidding, that’s a half cup of Nutella in there.
I think it’s okay, though. I’ve been eating just tiny bowls of it, like this. Moderation, right? I know if I put the whole huge bowl near me, it’s game over. And it’s so sweet and rich, just a few bites will do you. Not that anyone’s judging if you end up eating the whole bowl. We’ve all been there.
